Piri Piri Chicken Recipe
INGREDIENTS

2 chicken drumsticks, skin on
·
Generous squeeze of lemon
·
1 tablespoon olive oil
·
30 milliliters
red wine vinegar
·
1 heaped teaspoon cayenne pepper
·
2 cloves of garlic, minced
·
1 heaped teaspoon paprika
·
1/4 teaspoon salt
·
1 heaped teaspoon chili flakes
·
Spicy rice
·
250 grams cooked rice, hot
·
1 tablespoon tomato paste
·
2 spring onions, thinly sliced
·
1 tablespoon coriander, finely chopped
·
Salt & pepper
·
Pinch chili powder
·
Squeeze lemon
INSTRUCTIONS
1. Slash through the skin of the chicken with a sharp knife
and lay on a baking sheet. Mix all the marinade ingredients together and brush
over the chicken. Bake for 20m at 190c.
2. To make the spicy rice mix all of the ingredients
together in a medium sized bowl and serve straight away.
